We are still in quarantine at our house, being lucky enough to work remotely. And we have been cooking a LOT. So of course I had to find a great balsamic now that it’s harder to shop, to be able to make one of our family favorites – Weekend Pasta. I love the version from Barefeet in the Kitchen with a couple of tweaks for our family.
I add all the ingredients sans the pepper and garlic to a small mixing bowl.

Then I add one of my favorite ingredients for so many recipes- balsamic glaze. I add about 2 TBSP for extra flavor.

Using a hand wisk, mix all ingredients until its achieved the thickness you want. Here’s my finished product – beautiful 😍

This recipes makes enough to use 2-3 times, so I just store leftovers in a jar in the fridge for next time.

Since I posted the weekend pasta recipe, we have switched from lettuce to spinach for this recipe. It’s so good and has lots of extra nutrition for us!
